Wow, did I mention that Thanskgiving was busy? Yep. Had the hubs heading to go pick up his kids in Tennessee (which totally did not come out as planned) a total round trip of about 24 hours. He got back close to 7am on Thanskgiving Day. So that left me to my own devices for Thanksgiving prep. Needless to say, I was a little overwhelmed so I didn’t get my darn pie recipes posted to the blog before Thanksgiving. Paleo Pecan Pie With that said, it was a good opportunity to test my Paleo Holiday Pies with a crowd on Thanksgiving! I am happy to say that the family was pretty happy with the pies, especially the Pecan Pie. After a few alterations to each recipe before finalizing them, I think they are pretty good and super tasty. So if you still have (who doesn’t) holiday events to attend, I highly recommend trying them! They are gluten-free, dairy-free and paleo friendly. Using the Paleo Pie Crust I think you get a great pie and crusty, flakey crust combo. Toss a little coconut whipped cream on top and… yes… *drools* I think I need to bake a few more…
